Honey Roasted Sweet Potatoes

Forget the marshmallow topping and thick syrup that often drags down this superfood. These sweet potato bites are a tasty snack or side dish. Chop. Toss. Heat. Eat. Sweet potatoes are a nutritional powerhouse offering fiber, vitamin A, and anti-inflammatory compounds.

Ingredients
  

  • 2 pounds Sweet potatoes
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp lemon juice
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • Pepper, to taste

Instructions
 

  • Preheat oven to 350 degrees F.
  • Wash, peel and dice sweet potatoes.
  • In a medium bowl, combine olive oil, honey, lemon juice and cinnamon.
  • Add diced sweet potatoes to the mixture and toss to coat.
  • Place sweet potatoes on a lined baking sheet or in a 9x13-inch baking dish.
  • Sprinkle sweet potatoes with salt and pepper.
  • Bake for about 1 hour, or until sweet potato cubes are tender.
