Honey Roasted Sweet Potatoes
Forget the marshmallow topping and thick syrup that often drags down this superfood. These sweet potato bites are a tasty snack or side dish. Chop. Toss. Heat. Eat. Sweet potatoes are a nutritional powerhouse offering fiber, vitamin A, and anti-inflammatory compounds.
- 2 pounds Sweet potatoes
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp lemon juice
- 1/4 tsp cinnamon
- 1/2 tsp salt
- Pepper, to taste
Preheat oven to 350 degrees F.
Wash, peel and dice sweet potatoes.
In a medium bowl, combine olive oil, honey, lemon juice and cinnamon.
Add diced sweet potatoes to the mixture and toss to coat.
Place sweet potatoes on a lined baking sheet or in a 9x13-inch baking dish.
Sprinkle sweet potatoes with salt and pepper.
Bake for about 1 hour, or until sweet potato cubes are tender.
