Kohlrabi Apple Slaw

Kohlrabi is one of the more unusual members of the cabbage family, it can be eaten raw or roasted. Kohlrabi is an excellent source of fiber, vitamin C, potassium and B6.

Kohlrabi Apple Slaw

Ingredients
  

  • 2-3 kohlrabi bulbs peeled and cut into matchsticks
  • 2 large Granny Smith or Honeycrisp apples cored and cut into matchsticks
  • 1 shallot thinly sliced
  • 1/4 cup apple cider vinegar
  • 1 tbsp dijon mustard
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley or cilantro chopped
  • Salt and pepper to taste

Instructions
 

  • Whisk together the cider vinegar, dijon mustard and olive oil.
  • Season with salt and pepper, then add the sliced shallots.
  • Mix to combine then let sit for 5 minutes for flavors to marry.
  • Stir in kohlrabi and apple matchsticks.
  • Serve fresh or refrigerate to serve chilled.
